Guiness Beef Pie

- 4 tablespoons butter
- 2 tablespoons plain white flour
- Rosemary
- Salt&Pepper
- Egg
- 2 Large red onions
- 4 Cloves garlic
- 2 carrots
- 2 celery sticks
- 10 mushrooms
- 1.5 kg of beef; stew meat
- 2 cans Guiness
- Puff pastry - frozen from store
- 250gms of grated cheddar
Instructions:
- Chop red onions, and celery. Mince garlic. Slice mushrooms. Cut beef into bite-sized pieces.
- Season beef with salt, pepper, and rosemary
- Preheat oven to 190 Celsius
- Fry onion and garlic in butter in oven-proof ceramic coated cast iron pot with lid
- Brown the beef in a separate pan, then add to pot
- Add carrots, celery, mushrooms. Stir until mushrooms are dark and moisture has evaporated
- Add Guinness to just cover the beef. Cover and put in oven for 1.5 hours
- Add half the cheddar and cook for another hour
- Pour stew into baking tray and scatter remaining cheese on top then cover with pastry. Pierce pastry and brush with beaten egg yolk
- Bake until golden brown ~45mins
