Guiness Beef Pie

Beef pie

  • 4 tablespoons butter
  • 2 tablespoons plain white flour
  • Rosemary
  • Salt&Pepper
  • Egg

  • 2 Large red onions
  • 4 Cloves garlic
  • 2 carrots
  • 2 celery sticks
  • 10 mushrooms
  • 1.5 kg of beef; stew meat
  • 2 cans Guiness
  • Puff pastry - frozen from store
  • 250gms of grated cheddar

Instructions:

  1. Chop red onions, and celery. Mince garlic. Slice mushrooms. Cut beef into bite-sized pieces.
  2. Season beef with salt, pepper, and rosemary
  3. Preheat oven to 190 Celsius
  4. Fry onion and garlic in butter in oven-proof ceramic coated cast iron pot with lid
  5. Brown the beef in a separate pan, then add to pot
  6. Add carrots, celery, mushrooms. Stir until mushrooms are dark and moisture has evaporated
  7. Add Guinness to just cover the beef. Cover and put in oven for 1.5 hours
  8. Add half the cheddar and cook for another hour
  9. Pour stew into baking tray and scatter remaining cheese on top then cover with pastry. Pierce pastry and brush with beaten egg yolk
  10. Bake until golden brown ~45mins
